Yunnan black tea, also known as Dianhong, is a renowned Chinese tea that originates from the traditional processing techniques of green tea in Yunnan. Often celebrated as the boldest black tea, it is prized for its robust flavor and rich history.
The production process involves plucking, withering, rolling, fermentation, and drying. Fermentation is the critical step, where temperature and humidity are meticulously controlled to oxidize the polyphenols in the tea leaves. This process creates the signature red tea liquor and the distinctive, aromatic profile unique to black tea.
Compared to Zhengshan Xiaozhong (Lapsang Souchong) and Keemun black tea, Yunnan black tea embodies a wild and untamed character, offering a striking contrast to its tightly rolled and refined dry leaf appearance.
