Anxi Tie Guan Yin, originating from Fujian, China, is a uniquely flavored oolong tea (qingcha) and is recognized as one of China's top ten famous teas. It belongs to the semi-fermented tea category.
Between 1725 and 1735, Anxi tea farmers developed Tie Guan Yin, which refers both to the tea and the tea plant variety. With the rise of Gongfu tea art, a distinctive Anxi tea culture emerged. One notable technique for brewing Tie Guan Yin is “High Mountain and Flowing Water”, where boiling water is poured along the teapot's wall, causing the leaves to swirl and release their full aroma and flavor.
